Cauliflower is certainly not a south east Asian ingredient 🙂 this is delicious, keto-friendly fusion at its finest though. Added bonus is that it’s a vegetarian dish and includes a healthy dose of your recommended daily veg, fibre intake as well as protein and fats to keep your body humming.
Is it spicy?
No. It is packed with flavour from the spices used, but any hot chili Thai food is known for is very subdued and you can leave it out altogether. To save spoons, I use the Gourmet Spice Kits Red Thai Curry kit which has a tiny amount of chili. You have the option of making the No Spoons Thai Curry Spice Blend or check out our original Cauliflower and Cashew Soup recipe for a more classic flavour.
Aside from adding flavour to dishes, I like cooking with a lot of spices for their medicinal benefits as well.
Cauliflower: frozen v fresh?
This soup can be made with frozen or fresh cauliflower. We’ve even used cauli rice because that’s what’s been in the freezer. Woolies and Coles now offer cauli rice with the prepped veggies in the fresh fruit and veg sections or with the frozen veg. Frozen cauliflower can also be really easily riced making it a perfect spoonie freezer staple.
Is cauliflower inflammatory?
Cauliflower does not cause inflammation by itself. In fact, it is thought to be a non-inflammatory food and is often part of diets that aim to reduce inflammation. Cauliflower has a lot of antioxidants, vitamins, and minerals, like vitamin C, vitamin K, folate, and fibre. These nutrients have been linked to lowering inflammation and improving health in general. Cauliflower also has molecules in it, such as sulforaphane and indole-3-carbinol, that can help reduce inflammation.
It is a cruciferous vegetable which can be challenging to digest for some people. Cooking cruciferous vegetables can help break down tough fibers and reduce the activity of goitrogens and other potentially problematic compounds. Steaming, boiling, or roasting cruciferous vegetables can make them easier to digest while retaining their nutritional value. And our Thai Red Curry Cauliflower Soup has you covered!
Why cashews?
The cashews add a creamy, thicker texture to the soup without adding dairy and adds to the nutrition profile. Cashews are a good source of healthy fats, protein, vitamins, and minerals, including magnesium, phosphorus, and zinc.
